Tofu and Quinoa Stir-Fry

Hi all! Boy do I have a recipe for you.

I’ve been trying really really hard to eat super healthy. So Pinterest has kind of become my new best friend. There are SO many wonderful recipes on there for any diet you could ever want to be on.

So this week i decided to try my hand at Quinoa. Which, if you don’t know anything about, you really should try it. It’s SUCH a good source of protein. And you can make it taste like pretty much anything. Anyways, I got the recipe via Pinterest via MyRecipes.

I wanted to make enough so that I could take some for lunch the next day, so I cooked quite a bit. Here’s what you need:
1 cup Quinoa
1 tablespoon vegetable oil
1 red pepper
2 teaspoons grated ginger
1 green pepper
2 cloves of garlic, finely chopped
1 tablespoon red chili flakes
2 tablespoons stir fry sauce (I use the stuff from Fresh and Easy, I love it)
1 teaspoon soy sauce
salt and pepper to taste

1- Place quinoa in a small saucepan with 3/4 cup water and 1/4 tsp salt. Bring to a boil, then reduce heat to low. Cover and cook, until quinoa absorbs water, about 15 minutes. Remove from heat.
2- Heat oil in a large skillet over medium-high heat. Cook bell peppers, ginger, garlic, tofu, and chile flakes. cook, stirring frequently, about 3 minutes.
3- Remove vegetables and return skillet to heat; add quinoa. Cook, stirring constantly, about 2 minutes. Add vegetables, tofu, and soy sauce; cook 1 minute more.

And there you have it! It’s pretty yummy. Now, I took pictures, but then lost my camera :-( But this is what it should look like.
